How can I export a list of all the user-defined keyboard shortcuts?

You can export the shortcuts using the SHORTORG.ZIP Shortcut Organizer utility from Chris Woodman (also listed on the downloads page of this site).

But if you just want a hard copy select File + Print, and where it says “Print what:” change it to “Key assignments” and press OK – you could also get a soft copy this way, by printing to a file or to a PDF.
